Strawberry Shortcake

This week as I was looking for some kind of new dessert, I got a hankering (that's a craving for you city folk) for something with strawberries. One of my favorite desserts has always been Strawberry Shortcake, but that gel in the pack at the grocery store is THE nastiest stuff on the planet...trust me!

Anyway, I got on the internet and searched high and lo for a homemade strawberry shortcake recipe, and then I discovered how to make my strawberries make their own juice. It is so simple that a 2 year old could do it. Now granted, I did not make the shortcake from scratch. I used up what I already had at the house, but the next time I make them, I will definitely make those from scratch. So without further ado, here is my scrumptious Strawberry Shortcake:

Strawberry Shortcake

1 pint of strawberries, hulled and coarsely chopped
1/4 sugar
Shortcakes
Whipped Topping

Take strawberries and sugar and dump in a bowl. Mash with a potato masher until juices begin to flow. Allow to rest on the counter for 1 hour. Separate mixture between shortcakes and top with whipped topping. When you are done, they will look this delicious!
