Mississippi Mud Cake

Yesterday I was having cooking withdrawals. I get those when I don't get to make new creations in a while. Since we have been busy, I just have not done much cooking, so I got my handy recipe box out yesterday and started digging! I found this scrumptious recipe that had to be mine--end of story!

I have had a couple of requests to try to do step by step photos, so this is my first attempt at that. I cannot promise it will turn out right--the steps that is. I usually like to post the recipe and then the finished product picture, so here we go!

To make this cake, you will need
(You will also need eggs and oil which kinda got left out of the picture...oops!)
  • 1 box of devil's food cake mix
  • 1 cup of chopped pecans
  • 3 cups of mini marshmallows
  • 1 cup semi-sweet chocolate chips
The first thing you do is prepare the cake according to package directions and then sprinkle the pecans on the cake batter.
(excuse my pans. It is not dirty--it just gets LOTS of use. I cook a lot...remember?)

Now bake the cake according to the package directions. When the cake is done, remove from the oven and sprinkle your marshmallows onto the cake.
Put the cake back in the oven for five minutes and when it comes out your marshmallows should look something like this:

Now you are going to melt your chocolate and drizzle it over the top of the marshmallows.
Now all that is left to do is cut you a slice and enjoy! Just so you know, this cake is super rich so you will not want to eat a big slice. It might make your tummy ache!

Enjoy!
