Stromboli

Growing up in my hometown we had this restaurant that served a fabulous pizza-like concoction. My first taste of a stromboli was when I was seven years old and stayed the night at my sister's house. I have been wanting to experiment and try to put together my own version of what I remember and here is what I came up with:


Here is the recipe! Hope you enjoy.

Pizza Dough:

Ingredients

  • 2 1/2 cups all-purpose flour, or as needed
  • 1 envelope Fleischmann's® RapidRise Yeast*
  • 3/4 teaspoon salt
  • 1 cup very warm water (120 degrees F to 130 degrees F)
  • 2 tablespoons olive or vegetable oil
  • Cornmeal

Directions

  1. In a large bowl, combine 2 cups flour, undissolved yeast, and salt.Stir very warm water and olive oil into flour mixture. Stir in enoughremaining flour to make soft dough. Knead on lightly floured surfaceuntil smooth and elastic, about 4 to 6 minutes. Cover; let rest onfloured surface 10 minutes.
  2. Lightly oil 1 (14-inch) or 2 (12-inch) round pizza pan(s).** Sprinklewith cornmeal. Shape dough into smooth ball. Divide and roll dough into rectangles. Make sure to roll pretty thin.
  3. Fill with meat from the following recipe:
Stromboli

Ingredients

  • 1/2 pound thinly sliced salami
  • 1/2 pound thinly sliced deli ham
  • 1/2 pound thinly sliced pepperoni
  • 1/2 pound thinly sliced provolone cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Romano or Parmesan cheese
  • 1 tablespoon garlic powder
  • 1 tablespoon dried oregano
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon pepper
  • 1 egg yolk, beaten
 
  1. Use pizza dough recipe from above. Arrange the salami, ham,pepperoni and provolone cheese over each rectangle. Sprinkle each with mozzarella cheese, Romano cheese, garlic powder,oregano, parsley and pepper.
  2. Roll up each rectangle jelly-roll style, beginning with a long side.Seal seams and ends. Place seam side down on two greased baking sheets.Brush with egg yolk.
  3. Bake at 375 degrees F for 25-30 minutes or until golden brown. Letstand for 5 minutes before slicing. Serve warm. Refrigerate leftovers.

BBQ Chicken Pizza

I love pizza! It is one of my most favoritest foods(okay...I know it is not spelled right, but I love that word). Last week, I tried my hand at making homemade bbq chicken pizza and it turned out fabulous!
 
I hope you enjoy this recipe as much as I did putting it together!

Ingredients
Pizza crust
bbq sauce
chicken breasts
caramelized onions
shredded cheddar cheese
Self Rising Pizza Crust
2-1/2 Cups All Purpose Flour
2 tsp Baking Powder
1 tsp Salt
1 tsp Dry Active Yeast
3/4 Cup Water
1/4 Cup oil
In bowl combine flour, baking powder,salt, and yeast. Stir it up to distribute the salt and yeast evenly.Add the water and oil. You may need to add a teaspoon or more of waterif the day is dry. Mix the dough until it forms a ball in the middle ofthe bowl. It should be a little stiffer than biscuit dough. Knead doughabout 10 to 12 times and then form in a ball. Place the ball in thecenter of a 16" pizza pan or a 9x13 pan. Use your hands and a rollingpin to roll dough out into the pan. Press the dough into the pan untilit is medium thickness. Cook crust on 400 degrees for about 8-10 minutes. Remove from oven.

Boil your chicken until it is done. You can use whatever kind of chicken that you want. I always use white meat because that is what my family likes. After your chicken is done boiling, take it out and allow it set and cool for just a  bit and then shred it.
Take an onion and slice it in half. Take each half and slice very thinly and place in a pan with a couple of tablespoons of butter on medium to low heat. Allow the onions to cook until they are translucent and begin to caramelize.

Now it is time to assemble the pizza!

Take your pre-baked crust and slather it with bbq sauce. Use the sauce of your choice(I prefer honey flavored). After slathering with bbq sauce, take the shredded chicken and add just a tad of bbq to it so that it does not dry out and then spread it evenly on your pizza crust. Sprinkle the shredded cheddar cheese on top and then scatter the onions on top of that. Place in a 400 degree oven for about 10-12 minutes or until the crust and toppings are done to your liking.

I am telling you, this pizza is awesome and it is a great way to use up leftovers in the fridge!

Pasta Pizza Bake


I meant to post this earlier this week when I made it, but time got away from me, so I am just now posting this recipe here.



I am one of those people who have to have a recipe in order to bake something most of the time. Stephen has been really encouraging me to use my culinary skills and just experiment sometimes. Well...here is my latest experiment!


I wasn't for sure what I was going to do but I had Penne Pasta, hamburger meat, pizza sauce, and mozarella cheese. I just started throwing things together and it turned out AWESOME!!!

Here is the recipe for you! Hope you enjoy.

Pizza Pasta Bake

1 box of Penne Pasta cooked accoriding to package directions
pizza sauce( recipe included here)
1 pound of hamburger meat cooked
1 cup or more of mozarella cheese
Pizza Sauce
(3) 8 oz cans of tomato sauce
3 teaspoons of sugar
1 1/2 teaspoons basil
3/4 teaspoon oregano
3/4 teaspoon garlic powder
3 teaspoon onion powder
3 tablespoons of olive oil
(Combine all of these ingredients together and let them site for about 10 minutes until flavors mesh together)

Mix together hamburger meat, cooked noodles, and pizza sauce. Pour into a casserole dish. Top with mozarella cheese and put in a 350 degree oven for about 25 minutes!
This tastes sooooo good!

Breakfast Pizza

If you know my family, then you know how important breakfast is around here. Our newest breakfast creation that has become my favorite is Breakfast Pizza! Never heard of? Well, read on and you will see just how scrumptious this pizza is!

Breakfast Pizza

1 can of cresent rolls
1 lb of sausage cooked, crumbled, and drained
1 cup of shredded cheese
3 eggs, beaten lightly
2 cups shredded frozen unthawed hashbrowns
salt and pepper to taste

1. Take cresent rolls and seperate. Place in a pan that has raised sides and seam them together to make a pizza crust.

2. Sprinkle sausage, cheese, and hashbrowns onto crust. Pour eggs over all the other ingredients

3. Salt and pepper to taste.

4. Bake in a 350 degree oven for about 20 minutes or until eggs are set and edges of pizza are golden brown.

Homemade Pizza from The Hillbilly Housewife

With the rising costs of food and gas here lately, Kayla and I have been looking for ways to make things "homemade" to save on costly prepackaged foods. Recently a friend of mine directed me to this website, Hillbilly Housewife.
I started looking at all the really helpful frugal information on this website and was pleased to find this is exactly what I was looking for. They have this really great recipe for homemade pizza on there! Kayla and I decided to make a "Meat Lover's" pizza for Stephen. It was so easy to make and it tasted delicious!
Kayla and I were tickled to death that it came out looking like a pizza you would actually order in a restaurant. Anyway, I thought I would share the recipe with you! Hope you all enjoy!


Self Rising Pizza Crust

Mix the dough until it forms a ball in the middle of the bowl. It should be a little stiffer than biscuit dough. Knead dough about 10 to 12 times and then form in a ball. Place the ball in the center of a 16" pizza pan or a 9x13 pan. Use your hands and a rolling pin to roll dough out into the pan. Press the dough into the pan until it is medium thickness.
Almost Instant Pizza Sauce
8 oz can tomato sauce
1 tsp sugar
1 tsp Italian Seasoning
1/4 tsp Garlic Powder
1 tsp sugar
1 tsp onion powder
1 tbsp oil for flavoring
In a large bowl, combine the tomato sauce, Italian Seasoning, garlic powder, sugar, onion powder, and oil. Mix it well and spread on the pizza crust.
Toppings
I microwaved some bacon and crumbled it up on our pizza. We also used pepperoni, and browned some sausage and hamburger. We sprinkled this on top of the pizza sauce and then topped our pizza with cheese!
Bake at 425 degrees for about 25 minutes. This is a great way to make homemade pizzas!

Homemade Pizza

Kayla has become quite the culinary student lately. She is loving the fact that she can cook. I am amazed at her curiosity and her love for learning.
One of her favorite things to fix is homemade pizza.

It is very easy to make and fun when the whole family gets involved. We have made cheese pizzas, ham and pineapple, and of course an all meat pizza for my meat lovin’ man. Here is my pizza recipe:

Pizza Crust

1/4 cup oil
1 Tablespoon sugar or honey
2 teas. salt
4 cups flour
1 1/3 cup warm water
1 Tablespoon yeast
Mix for several minutes in mixer using dough hook, then let dough rest for 20 minutes.
Divide dough in 2 and roll out on pans. Prebake at 400 degrees for 8-10 minutes. You
can then use the crusts or freeze once they are cool. To use, spread with toppings and
bake at 400 degrees for 10-15 minutes.

Pizza Sauce

8 oz. Can tomato sauce
1 teas. sugar
1/2 teas. basil
1/4 teas. oregano
1/4 teas. garlic powder
1 teas. onion powder
1 Tablespoon olive oil for flavoring
Mix all ingredients in a small bowl and use to cover one pizza crust. You can double
this recipe if you are making two large pizzas.
For dessert, we had cupcakes! Kayla decorated these…she loves pumpkins!
